Nope I haven’t had a brain transplant and discovered the joys of cooking (sorry Dad) - my role in the kitchen is still limited to the washing-up. However, Craig has been hinting at me for a while that he’d like to guest post with some of his recipes. Given this has always actually translated to “Craig cooks, and I take the photos and write-up the entire post”, at first I wasn’t sure.

However, he’s made some amazing dishes recently that are worth sharing. So I made him promise to write down each recipe so all I have to do is dredge up my PA skills and type them up. Easy.
This first recipe is a topical one as it follows on from my post on Friday surrounding the horsemeat scandal. It’s delicious Homemade Cheesy Burgers made from locally sourced beef mince to show how easy it is to make-your-own, with a little twist that’ll smash processed varieties out of the ball park.
I think he was also trying to get me to watch him cook so I could make them for him at some point. Little does he know I actually had earphones on and was just nodding in time to Mumford & Son’s when he looked in my direction…

The ‘Make’: Homemade Cheesy Burgers
(Serves 2 generously)
Ingredients:
- 500g of lean beef mince
- 50g of mature cheddar
- 1/2 onion
- 1 tsp of olive oil
- Salt and pepper to season
Preparation:
- Finely chop the 1/2 onion!
- Grate the cheese!
Instructions:
- Empty the beef mince into a mixing bowl
- Add the chopped onions and a few generous pinches of salt and pepper and knead into the beef mince
- Make 8 flat round patties from the mixture
- Add a little cheese in the centre of 4 of the patties
- Pop the uncheesed patties on top of the cheesy ones and lightly press down the edges of with your fingertips to make your burgers
- Seal in a hot pan with a little oil - 2 minutes on both sides, and gently seal the sides (see piccie)
- Pop in the oven on 180 degrees for 10 minutes

- Sprinkle a little more cheese on top then serve either in buns, or with a jacket potato, or homemade wedges… and Voila!
